ICIF (International School of Italian Cuisine) At Asti, Italy


ICIF is a non-profit organization founded in 1991 to protect and defend the image of Italian Cuisine and Italian products among professionals who work in restaurants abroad. Since its foundation, ICIF has organized Master Courses (two months of theoretical and practical training at the school, plus a four-month internship period at selected restaurants)  and Short Courses (general and themed) for groups of young Italian and foreign professionals (Chefs, Sommeliers, Restaurateurs), who want to specialize in Italian Oenology and Cuisine.

Over the years students have graduated from Australia, Bermuda, Brazil, Canada, China, Cyprus, Korea, Philippines, Germany, Greece, Holland, Hong Kong, India, Turkey, Japan, Lebanon, Mexico, Perù, Philippines, Russia, Ukraine, Georgia, Iran, USA, Singapore, Sweden, Thailand, Indonesia, Taiwan, Venezuela, Honduras, El Salvador, Chile, Colombia, Santo Domingo and of course, Italy.

In 1997 ICIF turns a new page in its history by moving its headquarters into the prestigious Castle of Costigliole d’Asti, which had been restored to accommodate the Institute and its training facilities and paid for thanks to a contribution from the European Union, allocated to ICIF by the Region of Piedmont.

Adjacent to the classrooms, equipped with state-of-the-art facilities, there is a wine cellar and an oil cellar, where top Italian producers display their products. A modern tasting room is housed alongside. The promotion of our activities and the subsequent recruitment of students occurs thanks to the extensive network of representative offices abroad, currently present in over 27 countries across Europe, Asia, North America and South America.

ICIF provides an opportunity to food lovers, gourmets and all those who want to learn or improve their culinary skills, to choose from the various cookery, bakery and pastry classes which are included in the Culinary Courses for foreign students.

These classes are a different and fun way of challenging oneself, whilst  learning some of the secrets of Italian regional cooking, of traditional food or modern-creative preparations, in the company of the ICIF chef instructors and young professional cooks from around the world.

Each participant will have their own individual work station, equipment and all the ingredients necessary to prepare all the recipes chosen by the ICIF instructor chefs.

For wine enthusiasts, ICIF offers lessons on the techniques of wine tasting and food and wine pairing, with three different programmes to choose from.

Participants will attend the lessons by joining the classes of the foreign students already in attendance and be guided through the smell and taste sensations of the wine by the ICIF sommelier instructor, immersed in the pleasant and evocative atmosphere of the ICIF wine tasting classroom located in the ancient wine cellars of the Castle of Costigliole d’Asti.

ICIF – Italian Culinary Institute for Foreigners in the laboratories of the Orangerie, the reservation is required within 24 hours before the lesson.
