Elements, Inspired by Ciel Bleu, Led by the Talented Chef Gerard Villaret Horcajo – A Michelin-Starred Restaurant combining the Artistry of French Cuisine with Exquisite Japanese Influences
In the exceptional “Spring Gastronomic Dining Journey” you will be treated to a showcase of magnificent premium seasonal ingredients and flavors sourced from some of the finest artisanal producers in Europe and Japan.

“Ciel Bleu,” translates to “blue sky” in the French language and is not only a captivating expression but also the distinguished appellation of an exceptional restaurant in Amsterdam. This remarkable culinary establishment has been bestowed with the prestigious honor of two Michelin stars for an impressive and uninterrupted period of sixteen years.
At Elements, Inspired by Ciel Bleu, you have the option to choose from one of three culinary journeys: Ku-Ki, Chikyu, or Mizu. For wine lovers, the team is skilled in arranging wine pairings with delectable dishes. However, if you’re seeking a unique and novel experience, I recommend exploring food pairing with Kombucha. It presents an opportunity to embark on a culinary adventure unlike any you’ve experienced before.

The White Asparagus dish is truly remarkable. It features a delightful combination of morels, black truffle, and cured egg yolk. The presentation is not only visually stunning but also enhances the overall dining experience. I absolutely adore this dish and highly recommend it.
The signature BaBa A5 Miyaki Wagyu dish is an absolute must-try. As a devoted beef enthusiast, I couldn’t be happier indulging in this delight. Its juiciness, tenderness, and unrivaled deliciousness are truly unparalleled. The “Canard” dish that the team proudly present a duck prepared in a salt crust, skillfully sharing their cooking techniques with us. This delectable creation is accompanied by delightful additions such as Togarashi seasoning, Canellonis, and Foie Gras. I love the stunning orange color theme of this dish, but it’s not just about the presentation; the combination of flavors and textures is truly remarkable.
Kombucha is renowned as one of the healthiest beverage options available. It is often preferred over sugary sodas or artificially flavored drinks due to its lower sugar content and natural fermentation. Additionally, kombucha contains antioxidants, which are known for their ability to combat harmful free radicals in the body and promote overall well-being. Kombucha is widely appreciated for its potential health benefits. It is often hailed as a source of probiotics, which can contribute to a healthy gut microbiome and aid in digestion. By introducing beneficial bacteria into the digestive system, kombucha may assist in promoting overall digestive health.
Kombucha production begins with the creation of a SCOBY, called the “mother,” which serves as the foundation for the fermentation process. Once the SCOBY is ready, the first fermentation commences. Many enthusiasts choose to proceed with a second fermentation to carbonate the drink, allowing natural carbonation to occur and enhancing the texture and mouthfeel of the kombucha.
I observed with admiration as the chef personally came out to check the satisfaction of each guest, seeking feedback at every single table. I was truly impressed. The service team here also has done a great job. I love the positive energy of the team here. I can feel that everyone loves and is so proud of their restaurant, and they want to share these happy moments with us. We were impressed from the moment we arrived until our farewell. We left the place with lots of great joyful moments. I am eagerly looking forward to revisiting this restaurant again soon.
