Review: KOUBAI – Ginza Shabu Shabu at Dusit Central Park Bangkok | New Japanese Restaurant 2025
Akaushi beef enthusiasts can now rejoice—the premium delicacy has arrived in Bangkok. Ginza Shabu-Shabu “Koubai,” the celebrated Tokyo dining concept with flagship locations at Ginza SIX and Tokyo Solamachi®, has made its Thailand debut at Dusit Central Park.

Chef Masaji Iwahashi
For over two decades, Chef Iwahashi has honed his expertise, specializing in kaiseki—the elegant, multi-course meal that showcases seasonal ingredients and refined techniques. His commitment to the craft is a testament to his passion, and his long-standing tenure of 25 years with the Umenohana group reflects his deep dedication to excellence.
Now, he is taking his expertise to a new level as the head chef of KOUBAI. This premium brand, which specializes in Akaushi beef, is officially launching its first location outside of Japan

Operated by the Umenohana Group, established in 1976 with over 280 restaurants worldwide, KOUBAI brings Japan’s most elusive wagyu and authentic culinary traditions to Bangkok

The Aka-Ushi Salad is fresh, vibrant, and the perfect way to start your meal. It’s also ideal for sharing with a friend or loved one.

Seared Aka-Ushi Beef Tartare — a modern creation that invites international diners to savor rich, flavorful bites. Perfect for spreading over crisp baguette slices.
Known for its authentic Ginza dining experience, KOUBAI specializes in the rare Akaushi Beef — the “phantom wagyu” representing just 0.6% of beef in Japan — sourced directly from Kosei Ranch in Kumamoto and GI-certified alongside Kobe and Matsusaka Beef.

Dedicated to sustainability, Akaushi cattle help maintain Aso’s ancient grasslands, preserving local ecosystems while producing healthy, flavorful beef.
