Biscotti Welcomes Michelin-Starred Chef Cristina Bowerman from Rome’s Glass Hostaria for a Special Residency, November–December 2024


Biscotti fans now have the exclusive opportunity to experience Chef Cristina Bowerman’s contemporary and innovative Italian cuisine. Her dishes, which push the boundaries of the traditional Trastevere dining scene, tell a story of taste through an ongoing dialogue of traditions, cultures, memories, and places. This exceptional dining experience is available until December 30, 2024.

Biscotti by Cristina Bowerman – A unique menu featuring Glass Hostaria signature dishes as well as menu items carefully crafted exclusively for Bangkok diners.  

Guests can expect appetizers including  Almost A Pizza, comprising a creamy celery root pizza with pomegranate molasses, Sea And Earth Tartare, featuring succulent beef and tuna tartare, with apple and caviar and the zesty Amberjack Sashimi, presenting amberjack infused in red beet juice, with beet miso.

An array of Italian pasta, Risotto and second courses follow, with many featuring Chef Bowerman’s unique take on traditional Italian fair. Dishes of note include a liquid Parmigiano Reggiano stuffed ravioli with seasonal truffle – A Glass signature for over 13 years, beef tenderloin with a velvety chocolate demi glace and grated foie gras torchon, and the Glass must have waila with pastrami pigeon breast, served with a BBQ leg and berry drops.

To tell you bit of background about Chef Cristina Bowerman, she was born in Cerignola, a small town in Puglia. In 2005, she moved to Rome and, after an initial experience at one Michelin Star, Convivio Troiani, joined Glass Hostaria, where she has been the incredibly successful Chef Patron for eighteen years.  Since 2010, Chef Bowerman has held a Michelin star and due to her commitment to food sustainability, the Michelin Guide recently included her in its global Green Initiative selection.

In 2023 she was included by Forbes among the 100 successful women whose commitment and leadership skills contributed to the growth of Italy, and she is also a valued member of Chefs’ Manifesto, the initiative launched by Paul Newnham, which aims to end hunger, achieve food security and promote sustainable agriculture by 2030. Chef Bowerman is also an Ambassador for Rise Against Hunger Italia and was one of the first Chefs to participate in the Plastic Free certification program for her restaurant, Glass Hostaria.

With an aim to spotlight culinary talent from across the globe, the Biscotti residency is one of many international culinary initiatives from Bangkok’s Anantara Siam this year. With a pop-up by New Delhi’s, Indian Accent (No.26 spot on Asia’s 50 Best), as well as culinary collaborations with Michelin Star chefs including the three Michelin Star Jimmy Lim of JL Studio and Chef Viki Geunes of Zilte, the resort’s award-winning bar Aqua also welcomed a stellar lineup of guest shift bartenders from the World’s 50 Best Bars.

Biscotti by Cristina Bowerman will be available from now till 30th December 2024 and is open from Monday to Saturday for lunch from 12.00pm to 2.30pm and Monday to Sunday for dinner from 6.00pm to 10.30pm.
